Cheese Quesadillas with veggies

Melt cheeses inside and fry in oil.  We had tortillas and pitas to use up.

Serve with vegetables.  We had onions, lettuce, and red peppers that needed to be eaten.

I put the bad lettuce in a ziplock bag in the freezer to be used when I make another batch of vegetable broth.

Leftover Chicken

My husband likes to grill a bunch of meat from time to time.  In order to make this chicken a little different from the first two times we ate it, I added BBQ and oil to it before I reheated in the toaster oven.

I peeled the skin from our leftover baked potatoes, added butter, dill dip, onions, and cheese to make mashed potatoes.

I reheated some leftover peas and added the onions and peppers from the quesadillas for our vegetable side that evening.

My kids are always asking for snacks.  On the weekends, I like to have food sitting out at all times. 

Since vegetables go bad quickly, veggies and dips are always a hit.  We needed to eat up these peppers, celery, and lettuce.  

We had an abundance of pitas so I set those out with the hummus as well.  I stuffed 1/2 pita with lettuce and peppers and topped that with ranch.  I ate that one up right away.  

We dyed easter eggs and had 1 that cracked mid-decorating.  H was super happy about the hard-boiled egg on the snack plate.  

They munched on this all day, and when they asked for a snack, I could just ask them if they had eaten what was on the table yet.

I simmered the asparagus with the chutney and water.  We must have gotten the bag of chutney when we did carry out one night.  

Then I added butter and sprinkled with parmesan and put in the broiler on low for a couple of minutes.  

This was our vegetable tonight with our brats and french fries.

This type of peanut butter always gets really dry by the end of the jar so I add just a little boiling water to make it spreadable. We bought this jelly on the way to a friend's cabin a long time ago.  There is hardly any left, but it's just enough to make a peanut butter and jelly sandwich...or two.

Not shown is the leftover oatmeal with our homemade maple syrup. H ate that as part of his breakfast this morning.  No wasted food this week!
