Turkey "Steaks", Mashed Potatoes, Gravy, and Fresh Peppers

Once the new year rolled around, I was looking for 300 calorie meals. I came across this turkey burger recipe made with applesauce and water chestnuts.  

Recipe:

1 lb. ground turkey breast

8 oz. diced water chestnuts

2 garlic cloves

Diced onion

1/2 cup applesauce

4 tsps. soy sauce

Makes 4 patties 

I made a giant batch of these and froze them on cookie sheets. Once they were frozen, I put into a ziplock bag and kept them in the freezer.  I was eating them every week for lunch with a side of rice and soy sauce.

But I grew tired of that lunch.  I knew my family would not go for these bland turkey burgers, so I made some gravy to add to the burgers and called them turkey steaks.  I served this meal with leftover mashed potatoes and fresh peppers.

 I love making chicken, beef, or pork stock and freezing them in cupcake trays.  When I need them for soups, casseroles, or gravies, it is so easy to thaw and use.

No matter how many times I tell my husband how to make gravy, it always comes out lumpy. He does this so often that our daughter now prefers his lumpy gravy to anything else.  

 

Use equal parts butter and broth.  

 

Melt the butter in a pan.  Turn the heat low so it is at a slight simmer.  Slowly whisk in spoonfuls of flour.

 

Then add the liquid broth and continue to whisk until creamy on low heat.

Homemade gravy

We always have fresh veggies in the fridge. My husband and I like to wash and cut them at the beginning of the week.  We keep in Tupperware so we always have a side of veggies for every meal.  If we ever have any left over veggies at the end of the week, we roast them and add to a meal.

This meal helped clean out both the refrigerator and freezer and save some peppers from going bad!
